			<content:encoded><![CDATA[<p>We went to Roy&#8217;s for dinner and were not disappointed. We had looked at the website where the executive chef, Brandon Konishi, was highlighted with regard to the inspiration for the Summerlin menu. The restaurant is enveloped with palms and tiki torches to mimic the warmth of Hawaii. Once in the restaurant, we were greeted with warmth where we had already made an online reservation, so seated quickly. As we were seated, the hostess laid the linen napkins in our laps as she held out the chair as we were seated. Our server, Alex, was prompt to ask us about a wine choice, but since we would be driving, we decided on passing on the wine. The list is long and you can order by the glass or by the bottle. That will be on our taste test list next time. Since we had looked at the menu prior, we had decided on the Roy&#8217;s Canoe Appetizer for Two. The display is beautiful and includes Coconut shrimp, Vegetable spring rolls, Szechuan baby back ribs, Shishito peppers, and Blackened Ahi. Robert loves fish and I have never eaten fish before, so as an apprehensive fish lover, I have to say that the Blackened Ahi is so tender, smooth, and the sauce is overwhelming to the palate. As a couple, we like to share dishes, so we ordered Roy&#8217;s Classic Roasted Macadamia Nut Crusted Mahi Mahi and the 16 oz. Pan Seared Bone-In Rib Eye with wild mushroom brandy pan sauce. All we can say is &#8220;out of this world.&#8221; The Mahi Mahi melted in our mouths, but had just enough crunch from the Macadamia nuts that the contrast was delightful. The Rib Eye melted in our mouths while the mushrooms and sauce accentuated the cut of meat. Each meal came with a potato, but not seasoned so much to take away from the Rib Eye or the Mahi Mahi. We highly recommend Roy&#8217;s with its delectable food and friendly service. As we left, we were added to Roy&#8217;s family for his philosophy is that his customers should be treated like family (Ohana), so if you want a special moment then visit Roy&#8217;s, but do remember that with quality comes a price, so check out the website to see the menu, wine list, and price for the evening. Enjoy and as Roy would put it &#8220;E Komo Mai&#8221; which means welcome.</p>
